Probably got something to do with the fact that opening fire on an allies city with a gunship is generally not considered to be good diplomacy. If the plan was to make enemy's all over the entire middle east, then you might as well just close all your embassy's, go home and let them get on with killing each other. That would save a lot more American lives.

The way it works with embassy's is that the building is considered to be US soil, so If you wanted to defend it you would need to be inside it. A gunship, by definition, would be operating on the other nations soil, and hostile actions would be an act of war or terrorism unless you had an agreement with that nations government that allowed you to act on their behalf. It is highly unlikely that their government would agree to that.
Try to remember that you are a democratic nation, not world dictators who can just do whatever they want without repercussions.

Most of the American public seems to have trouble with that.

but try setting foot on an island thousands of miles away and it's okay to send the fleet after them and sink their ships, right?

Well that was war. There was a lot of negotiation before we started shooting at them, it was their choice. I would try to make a comparison with a case of an American territory being invaded, but I can't think of one.
I don't know why you bring that up, its a fully democratic island, why should its peoples choice of government be denied to them by force.

I don't think your comparison is all that valid there.
