From where I sit, biometal is not so much a monster as it is hungry. It is most certainly a threat, but that's not to say it can't be tempered. A such the story deals with both the risks of going too far with what things you don't fully understand (probably the main theme) and the inevitability of destruction (hinted in FE).

Yeah, you know it better than those who develop multi-million dollar craft with pedals for rotation. Perhaps Scions actually fuse with their ships while inside and ISDF uses some sort of neural interface in their helmet/suit. Which would work for Scion pilots in ISDF craft and vice versa.
Imo, if we look at things from our current technological position the HOTAS or chopper setup would probably work best. Probably why we use them in multi-million dollar craft where human pilots need to control tons of steel with their lives depending on it.

A helicopter is dynamically unstable, it wants to spin and relies on the counter spin forces of the tail rotor to offset the spin and to yaw the craft, that's why the tail rotor's pedals exist in the first place. All the other controls on a helicopter are meant to control its various aspects of things like blade pitch, rotor disk facing and throttle (throttle being how faster the blades on the main rotor spin to generate lift) BZ2 craft appear to operate on totally different principles that a helicopter operates. I mean, I guess it could, use a pedal system, but joysticks seem much more reactive.

They are more qualified to design the interface of a fighter jet than a hover craft after working on a helicopter... But these are not hovercraft as we know them, they are jets that can not fly.

There are aircraft in BZ2. (Not in stock 1.0, but added since 1.2). For simplicity's sake, the cockpits would probably be similar to hovercraft. And, the Apollo program had its craft flown by joysticks, as you can see at here. (Look for the medium-gray sticks to both sides of the center seat).
Also, the first helicopters were all mechanical, no computers/fly-by-wire at all. They didn't have computers small enough to do that in the 1940s.
